These muffins came together in a snap. The most work was zesting and juicing the lemon. The mixing was all done by hand. If you don't own a cookie scoop that doubles as a muffin scoop, you should get one.
I sprinkled them with coarse sugar instead of making the glaze. These had a bright, lemon taste, and I love the added burst of poppyseed flavor. I will say that these are more like cupcakes than muffins to me. They were a bit sweet and the texture was very cake like. Not that it's a bad thing, mind you. These earned a big thumbs up from the Boy and the Girl. I think we'll be making them again.
I think you hit it on the head about the lemon flavor. That really makes it special. Yours look great.
ReplyDeleteThose look amazing! YUM! I like the course sugar idea!
ReplyDeleteYours look perfect - great rise! The sugar instead of icing is a great idea!
ReplyDeleteGreat idea on the sugar! I may do that next time. Your muffins look fabulous!
ReplyDeleteI like your sugar topping. I went with lemon cream cheese frosting. They really did taste like cupcakes!
ReplyDeleteThey look great! I'll have to top with sanding sugar next time - wonderful sub! :)
ReplyDeleteThey are perfect for a cold day! I loved this recipe too! Yours turned out really good!!
ReplyDeleteSugar on top was a good idea! Nice.
ReplyDeleteOh yum! I bet the coarse sugar was fantastic on these!
ReplyDeleteI love the fact that glaze vs no glaze is about half and half! I didn't glaze mine, but I think some crunchy sugar on top would have been great. They look fab.
ReplyDeleteThese look great! I of course loved this week as it was LEMON and no chocolate, but today I am working on next week's, which is chocolate and no lemon...figuring you will like those! Ulrike was making these muffins today and stuffing them with lemon curd...so tempted to make a half batch today and do that as well. Stop me fast.
ReplyDeleteThanks for baking with me your muffins look great. Using an ice cream scoop is the best baking tip!
