TWD: Pumpkin Muffins

We were so very seasonal this week!  I have a little confession to make.  I don't like pumpkin.  I don't like pumpkin pie.  A recipe for pumpkin ginger tea cake sounded really good, but, have I mentioned that I don't like pumpkin?  Thank goodness there are three other people around here who eat pumpkin baked goods!  

This was an easy enough recipe.  There were quite a few ingredients, but my assistant was able to handle it all easily.  She especially liked the stirring.  We substituted almonds and regular raisins for the walnuts and golden raisins because that's what we had.



The scooping with the ice cream scoop and the sprinkling of the seeds was pretty fun as well.  If you don't use an ice cream scoop for muffins or cupcakes, you should.  It's very handy.



We actually got quite a few more muffins than the recipe called for.  Here is a close-up of an unbaked muffin.



Here it is baked.  Still working on my photography skills.  White on white = a no no.



The muffins smelled great while they were baking.  The rest of the family really enjoyed them.  They did think that the sunflower seeds didn't add a whole lot.  I did take a taste.  While they weren't bad, I don't think I'll be eating them again.

At least you gave them a shot, right? And it sounds like they were enjoyed, even though they weren't a slam dunk. Pretty too.

Photos look great to me...white on white and all. Love the shot of the assistant...I can see where young assistants would love making this recipe. I'm not a big fan of pumpkin either...they make great Jack-o-Lanterns and all, but these were not bad muffins as they had a lot of other flavors kicking up their own flavors and the pumpkin was added in a small amount. Am thinking these are going on the table for Thanksgiving morning. And you are so nice to make these for the pumpkin eaters in your household...we get extra stars for that, right?

Your muffins look great! I even like them white on white. Glad your family liked them! Thanks for the ice cream scoop idea -- that would definitely help make mine a more consistent size!

I'm just smiling about white on white, because I started taking pictures on my nightstand because it has a light background...and I recognize the glare. It doesn't take away from how good your muffins look, though. (And I agree that these taste best to someone else...)

Hey at least you got that great smell of pumpkin in your house while they were baking. . . even if you don't like the taste of pumpkin. There's next week with the chocolate cupcakes. . maybe you will love those!

My sympathies on not liking pumpkin; tastes do vary so much! Your muffins turned out great, and how cool to have such an accomplished helper. I think your white-on-white photo looks artsy!

i agree with you about the sunflower seeds..not sure how that ingredient got in over our friend, the chocolate chip??!

Sorry they weren't your favorite...but they did look great! And I agree with your ice cream scoop suggestion - makes it sooo easy. I have 4 scoops of different sizes for cupcakes, muffins and cookies! :)

I think they look great! I agree that doing TWD is all about making things you wouldn't ever think of trying, in the hopes that sometimes you'll be surprised by finding you like something you thought you didn't! I made the brownie-caramel-peanut cake thinking "yuck," but wound up saying "yum," between mouthfuls of cake. Go figure!

Hey there. Made those this morning for the boy's birthday. I can see why you didn't totally hate them. They are not very pumpkin-y at all. Didn't find much flavor, actually. But it was a nice start to the day nonetheless...
